Save money by baking homemade crumb-topped coffee cake muffins instead of buying takeout muffins every morning.
Ingredients:
  • 3 tablespoons ground cinnamon
  • 1.25 tablespoons baking powder
  • 0.25 tablespoon salt
  • 0.75 cup whole milk
  • 2 tablespoons whole milk
  • 10 tablespoons unsalted butter, softened
  • 0.5 tablespoon vanilla extract
  • 1.875 cups all-purpose flour
  • 0.5 cup unsalted butter, melted
  • 2 tablespoons white sugar
  • 4.5 tablespoons brown sugar
  • 0.75 teaspoon pumpkin pie spice, or more to taste
  • 0.25 teaspoon salt
Instructions:
  • Heat up your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by lining it with paper liners.
  • Combine flour, sugar, cinnamon, baking powder, and salt in a large bowl, sifting as you mix.
  • In a spacious bowl, use an electric mixer to blend milk, butter, eggs, and vanilla extract. Gently combine with flour until slightly lumpy. Fill muffin tins with batter, leaving space for rising.
  • In a bowl, mix together flour, melted butter, sugar, brown sugar, pumpkin pie spice, and salt until crumbly. Sprinkle a generous amount of the crumb mixture on top of each muffin.
  • Bake in the preheated oven for 20-30 minutes until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
