Coffee Swirl Yogurt Cake

Coffee-infused yogurt loaf cake: a decadent marriage of flavors in every bite!
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup butter or margarine, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 cup plain yogurt
  • 1/4 cup international instant coffee mix (any flavor)
Instructions:
  • Preheat oven to 350°F. Grease and lightly flour the bottom of a 9x5x3-inch loaf pan.
  • In a bowl, combine flour, salt, baking soda, and baking powder; set aside. In a large bowl, use an electric mixer to beat butter, sugar, and vanilla on medium speed until fluffy. Add eggs one at a time, beating well after each addition. Gradually beat in the flour mixture and yogurt, alternating between the two, until the batter is smooth.
  • Take out 1 cup of the batter and mix in the dry coffee. Pour half of the plain batter into the pan. Spoon the coffee batter onto the plain batter in dollops. Add the rest of the plain batter. Use the handle of a wooden spoon to create a marbled design by swirling the batters together deeply.
  • Bake for 1 to 1 hour 15 minutes until a toothpick inserted in the center comes out clean. Allow it to cool for 10 minutes, then gently remove the loaf from the pan and transfer it to a wire rack. Let it cool completely for about 1 hour before slicing.
