Marbled Tea Cake

Delicious vanilla coffee swirl cake, perfect for tea time.
Ingredients:
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup butter
  • 0.75 cup white sugar
  • 2 eggs
  • 0.5 cup milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons instant coffee granules
  • 2 tablespoons boiling water
  • 2 tablespoons cinnamon sugar
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease an 8x8 inch baking pan.
  • In a large bowl, sift together the flour, baking powder, and salt. In a separate large bowl, use an electric mixer to beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in half of the flour mixture followed by the milk and remaining flour, mixing well after each addition. Stir in the vanilla extract.
  • Take a portion of the batter and place it in a small bowl. Mix 2 tablespoons of boiling water with instant coffee granules and stir it into the small bowl of batter.
  • Layer 1/2 of the vanilla batter into the prepared baking pan, add the coffee batter on top. Add the rest of the vanilla batter, then gently swirl the batters together using a butter knife.
  • Bake in the preheated oven for 35 to 40 minutes until a toothpick inserted in the center comes out clean. Allow the cake to cool on a wire rack for 30 minutes, then dust it with cinnamon sugar.
