Delicious veggie wraps filled with vibrant veggies, hummus, and wrapped in tender collard green leaves - a perfect light lunch option.
Ingredients:
  • 0.25 cup apple cider vinegar
  • 3 tablespoons kosher salt
  • 1 bunch collard greens
  • 1 (10 ounce) container roasted garlic hummus
  • 1 large red bell pepper, thinly sliced
  • 0.5 small seedless cucumber, cut into sticks
  • 1 medium red onion, thinly sliced
  • 1 (14 ounce) can artichoke hearts, drained and quartered
  • 1 cup packed baby arugula
  • 2 teaspoons freshly squeezed lemon juice
Instructions:
  • In a large pot, fill with 3 inches of water, add vinegar and salt, and bring to a boil over medium-high heat.
  • Prepare the collard greens by trimming the stems of 4 large leaves until they lay flat on a cutting board without tearing. Make sure to remove the center stems to ensure even cooking.
  • Cook the leaves in boiling water until bright green and wilted, about 30 seconds. Transfer the leaves to a bowl of ice water using tongs and let them cool for 3 minutes. Pat the leaves dry before using.
  • Place collard leaves on a spacious cutting board. Evenly divide ingredients among the 4 leaves. Spread a generous layer of hummus on each leaf, maintaining a 2-inch border. Stack bell pepper, cucumber, onion, artichoke hearts, and arugula in the lower third of each leaf. Finish with a drizzle of lemon juice.
  • Gently fold the sides of each leaf towards the center, using your hands to secure the sides, then roll starting from the bottom. Slice diagonally before serving.
