Delicious Colombian baked potato casserole from Norte de Santander, using simple ingredients for a taste of tradition.
Ingredients:
  • 6 large potatoes, peeled and sliced
  • 2 tablespoons vegetable oil
  • 6 links pork sausage, sliced
  • 0.25 cup diced white onion
  • 0.25 cup chopped green onion
  • 0.5 cup diced fresh tomato
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground dried thyme
  • salt and pepper to taste
  • 3 slices white sandwich bread, cut into 1-inch pieces
  • 0.5 cup milk
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 6 hard-boiled eggs, sliced
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13 inch glass baking dish.
  • In a large pot, submerge the potatoes in salted water and bring to a high boil. Reduce heat to medium-low, cover, and let simmer until tender for about 20 minutes. Drain potatoes and allow them to steam dry for a minute or two.
  • In a large skillet over medium heat, heat vegetable oil and cook sausage for 5 minutes. Add white onions and green onions, cook for another 5 minutes. Stir in tomato, cumin, and thyme. Season with salt and pepper. Simmer on low heat for 10 minutes.
  • In a bowl, gently coat the bread cubes with milk, ensuring each piece is thoroughly moistened.
  • Layer half of the potato slices in the dish, followed by the sausage mixture. Add sliced eggs, half of the moistened bread, mozzarella cheese, remaining potato slices, remaining moistened bread, and finish with Parmesan cheese on top.
  • Bake in the preheated oven for 30 minutes until fully heated.
