Festive pumpkin bars with creamy frosting - perfect for snacking!
Ingredients:
  • 0.75 cup butter
  • 2 cups white sugar
  • 4 eggs, beaten
  • 1 (15 ounce) can pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 cup chopped walnuts
  • 1 (3 ounce) package cream cheese, softened
  • 0.33333334326744 cup butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups sifted confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while you generously butter and flour a 10x15 inch jellyroll pan.
  • Cream together 3/4 cup butter and white sugar until light and fluffy in a large bowl. Add eggs one at a time, then stir in pumpkin. Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg; stir into pumpkin mixture. Mix in walnuts and spread evenly into prepared pan.
  • Bake in a preheated oven for 30-35 minutes, or until a toothpick inserted near the center comes out clean. Allow to cool completely before frosting.
  • Combine cream cheese, 1/3 cup butter, and vanilla in a medium bowl until smooth. Gradually mix in sugar until smooth. Spread over cooled pumpkin bars and cut into squares.
