Secret to fluffy scones like Nanna's? Sweetened condensed milk!
Ingredients:
  • 395g can sweetened condensed milk
  • 95g butter, chilled, chopped
  • 59.40 gm dark brown sugar
  • 300.00 gm self-raising flour
  • 128.75 gm milk
  • Caramel sauce, to serve
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 210C/190C fan-forced and prepare a baking tray by lining it with baking paper.
  • Set aside 1/3 cup of condensed milk and 60g of butter. Pour the rest of the condensed milk into a medium saucepan, then add the sugar and the remaining 35g of butter. Cook and stir over medium-high heat for 7 minutes until the sauce slightly thickens. Transfer the mixture to a heatproof bowl.
  • In a large bowl, place flour and rub in reserved butter using your fingertips. Make a well in the center. Combine milk and reserved condensed milk in a jug, stirring until smooth. Pour the milk mixture into the well. Using a flat-bladed knife, gently stir until the dough comes together. Turn the dough out onto a lightly floured surface and knead gently for 30 seconds or until it's smooth.
  • Shape dough into a 2cm-thick round and cut out 10 scones using a 6cm-round cutter. Place them touching on a tray and bake for 14 minutes until golden.
  • Enjoy your freshly baked scones with warm caramel sauce, whipped cream, and raspberries.
