Confetti Caramel Bars

Transform your leftover candy and nuts into a decadent confetti topping for delicious butterscotch bars.
Ingredients:
  • 1 cup packed brown sugar
  • 1 cup butter or margarine, softened
  • 1 1/2 teaspoons vanilla
  • 1 egg
  • 1/2 cup light corn syrup
  • 2 tablespoons butter or margarine
  • 1/2 bag (11-oz size) butterscotch chips (1 cup)
  • 1 1/2 to 2 cups assorted candies and nuts (such as candy corn, candy-coated chocolate candies and salted peanuts)
Instructions:
  • Preheat the oven to 350°F. In a large bowl, cream together brown sugar, 1 cup of butter, vanilla, and egg until smooth. Mix in the flour until well combined. Press the mixture evenly into the bottom of an ungreased 13x9-inch pan. Bake for 20 to 22 minutes until lightly browned. Allow to cool for 20 minutes before cutting.
  • In a small saucepan, gently heat corn syrup and butter until bubbling, then stir in chips until smooth.
  • Spread the delicious butterscotch mixture over the baked layer, then sprinkle with candies and nuts, gently pressing them into the mixture. Allow it to cool for at least 2 hours until the butterscotch is firm (avoid refrigerating). When ready, cut into 8 rows by 4 rows to make bars.
