Delightful shortbread star cookies make the perfect festive treat for guests.
Ingredients:
  • 125g butter, at room temperature
  • 70g caster sugar
  • 4.40 gm vanilla extract
  • 115g plain flour
  • 20.00 gm rice flour
  • Icing sugar mixture, to dust
Instructions:
  • Preheat the oven to 160°C. Beat butter, sugar, and vanilla in a bowl with an electric mixer until pale and creamy. Sift combined flours over the mixture and stir with a wooden spoon until just combined. Transfer the dough onto a lightly floured surface and gently knead until smooth.
  • Prepare 2 baking trays lined with baking paper. Roll out the dough on a lightly floured surface until it forms a 3mm thick disc. Cut out stars using a 7cm-diameter star-shaped pastry cutter. Make a small hole at the top of each star with a skewer. Arrange the stars on the trays and bake for 20 minutes, swapping trays midway, until they are lightly golden. Let them cool on the trays, then add a dusting of icing sugar and thread ribbon through the holes.
