Try this easy and affordable pantry omelette for a delicious breakfast on a budget.
Ingredients:
  • 65g long-life dried noodles
  • 125g can corn kernels, drained, rinsed
  • 50g salt-reduced lean leg ham, finely chopped
  • 1 small zucchini, grated
  • 3 eggs
  • 9.20 gm peanut oil
Instructions:
  • In a heatproof bowl, place the noodles and cover them with boiling water. Let them stand for 4 to 5 minutes until they become tender. Use a fork to separate the noodles, then drain and return them to the bowl.
  • Combine corn, ham, and zucchini with noodles. In a jug, whisk together eggs and 1 tablespoon cold water until smooth.
  • Preheat grill to medium-high and heat 1 teaspoon of oil in a small, ovenproof frying pan over medium-high heat. Add half of the noodle mixture, cooking for 1 to 2 minutes until heated through.
  • Drizzle half of the egg mixture over the noodles and cook until almost set, about 2 to 3 minutes. Place under the grill and cook for an additional 2 to 3 minutes until golden and fully set. Transfer the omelette to a plate, then repeat with the remaining noodles and egg mixture. Cut into wedges and serve.
