Homemade crunchy corn nuggets with a golden fried perfection.
Ingredients:
  • 1 (11 ounce) can creamed corn
  • 1 (11 ounce) can whole kernel corn, drained
  • 0.5 cup yellow cornmeal
  • 0.5 cup all-purpose flour
  • 1 egg white
  • 2 tablespoons milk
  • salt and pepper to taste
  • 3 cups vegetable oil for deep frying
Instructions:
  • Combine the creamed corn and drained whole kernel corn in a bowl. Prepare a baking sheet lined with aluminum foil, greased with vegetable oil or cooking spray. Spoon dollops of the corn mixture onto the sheet and freeze until solid, approximately 3 hours.
  • In a large deep skillet, heat one inch of oil to 350°F (175°C) or follow the manufacturer's instructions to fill a deep-fryer with oil.
  • In a medium bowl, combine cornmeal, flour, egg white, milk, salt, and pepper to make a flavorful batter. Dip frozen corn nuggets in the batter, then fry in hot oil until beautifully golden. Drain on paper towels before serving.
