Quick and delicious deep-fried sweet corn nuggets, perfect as a side or appetizer with minimal ingredients and effort.
Ingredients:
  • 2 pounds frozen white shoepeg corn, thawed and drained
  • 4 cups yellow cornmeal, or more as needed
  • 1.5 cups enriched flour, or more as needed
  • 1 cup white sugar
  • 2.5 teaspoons salt
  • oil for frying
Instructions:
  • Combine corn, cornmeal, flour, sugar, and salt in a large bowl until a thick paste forms. Adjust with additional flour and cornmeal if needed to achieve a paste-like consistency.
  • Prepare a dusting of flour on a sheet of waxed paper. Scoop a tablespoon of the corn mixture onto the paper and shape it into a ball. Continue with the rest of the batter, lightly flouring the paper when necessary.
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • Fry nuggets in hot oil until golden, for 2 to 2 1/2 minutes. Then, transfer to a paper towel-lined plate to remove excess oil.
