Gluten-free chicken nuggets coated in crispy rice flour and corn cereal for a tasty twist on a classic dish.
Ingredients:
  • 2 cups bite-size corn square cereal (such as Corn Chex®)
  • 2 eggs
  • 0.33333334326744 cup rice flour
  • 4 skinless, boneless chicken breast halves, cut into bite-size pieces
  • 0.25 cup oil for frying, or as needed
Instructions:
  • Process the cereal in a blender or food processor until it resembles bread crumbs, then transfer it to a bowl.
  • Whisk eggs until silky in one bowl. Transfer rice flour to another bowl.
  • Coat chicken pieces with rice flour, dip in beaten egg, and press into cereal for a crispy outer layer. Lay breaded chicken on a single layer on a large plate until all are done, ensuring they stay separate.
  • Drizzle oil in a large skillet to generously coat the bottom, then heat over medium-high heat.
  • Fry chicken nuggets in hot oil until golden brown and cooked through, about 2 to 3 minutes per side, ensuring they reach an internal temperature of 165°F (74°C).
