Gluten-Free Favorite Chicken Nuggets

Whip up irresistible homemade nuggets with a crunchy cereal coating.
Ingredients:
  • 3 cups Corn Chex™ cereal
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 3 tablespoons butter or margarine, melted
  • 1 tablespoon milk
  • 1 lb boneless skinless chicken breasts, cut into 1x1-inch pieces
Instructions:
  • Preheat the oven to 400°F. Line a cookie sheet with foil. Crush the cereal by placing it in a plastic bag or between sheets of waxed paper, and crush it with a rolling pin for ease.
  • Mix crushed cereal, cheese, salt, seasoned salt, paprika, and garlic powder in a medium bowl. In a separate small bowl, combine melted butter and milk. Dip chicken into the butter mixture, then coat evenly with the cereal mixture before placing it on a cookie sheet.
  • Bake nuggets for 9 minutes, then flip them over. Continue baking for about 8 more minutes, or until the coating is a light golden brown and the chicken is cooked through.
