Irish-style Corn O'Brien: Corn, bacon, and bell pepper cooked together.
Ingredients:
  • 2 slices bacon, cut into 1/2 inch pieces
  • 0.25 cup minced white onion
  • 2 tablespoons green bell pepper, chopped
  • 2 cups whole kernel corn, drained
  • 1 tablespoon chopped pimento peppers
Instructions:
  • In a large, deep skillet over medium heat, cook and stir bacon until evenly browned, about 10 minutes. Drain bacon on a paper towel-lined plate, keeping the flavorful grease in the skillet.
  • Sauté onion and bell pepper in the skillet until onion is soft and translucent, around 5 minutes.
  • Combine corn, pimentos, and the crispy bacon. Sauté until warmed, about 3 to 5 minutes. Season with salt and pepper to taste.
