Delicious corned beef sandwich with homemade cabbage coleslaw.
Ingredients:
  • 2 tablespoons white wine vinegar
  • 1.5 tablespoons Dijon mustard
  • 1.5 tablespoons prepared horseradish
  • 3 cups shredded cabbage
  • 1 cup thinly sliced red onion
  • 1 cup grated carrots
  • 10 slices rye bread
  • 2 tablespoons Dijon mustard, or to taste
  • 1 pound deli sliced corn beef, or more to taste
Instructions:
  • In a large bowl, combine vinegar, Dijon mustard, horseradish, salt, and pepper. While continuously whisking, slowly pour in the oil until the dressing is well emulsified.
  • Combine cabbage, onion, and carrots with the dressing, ensuring everything is thoroughly mixed. Refrigerate for 8 hours or overnight for maximum flavor development.
  • Make mouth-watering sandwiches by generously spreading each slice of bread with zesty mustard. Place 5 slices of bread on a clean work surface. Layer on flavorful coleslaw and savory corned beef, then top with the remaining bread slices. Press together firmly, slice, and serve up perfection.
