Irresistible cookies that no one can resist reaching for again and again!
Ingredients:
  • 125g butter
  • 140g (2/3 cup, firmly packed) brown sugar
  • 4.40 gm vanilla essence
  • 2 eggs, at room temperature
  • 275g (1 3/4 cups) self-raising flour
  • 170g (1 cup) sultanas
  • 80g (1 1/2 cups) cornflakes, lightly crushed
Instructions:
  • Preheat your oven to 180°C and prepare two baking trays with non-stick baking paper. In a large bowl, use an electric beater to whip together the butter, sugar, and vanilla until light and creamy.
  • Add eggs one by one, beating thoroughly after each addition until well blended. Gently fold in the flour and sultanas until fully incorporated.
  • Spread cornflakes on a plate. Shape tablespoonfuls of the cookie mixture into balls using your hands, then coat them with cornflakes. Arrange the coated balls on prepared trays, leaving about 3cm of space between each for spreading.
  • Bake in a preheated oven for 18-20 minutes, switching trays halfway, until golden. Let cool on trays for 5 minutes, then transfer to a wire rack to cool completely.
