Make delightful sultana and cornflake cookies for a weekend treat using cereal in a new way!
Ingredients:
  • 125g butter, chopped, at room temperature
  • 141.90 gm caster sugar
  • 4.40 gm vanilla essence
  • 187.50 gm self-raising flour, sifted
  • 20.60 gm milk
  • 375.00 ml cornflakes
  • 85.00 gm sultanas
Instructions:
  • Preheat your oven to 180°C and line two large baking trays with non-stick paper.
  • Cream together butter, sugar, and vanilla essence with an electric mixer until creamy. Mix in flour on low speed until just combined. Stir in milk until dough forms. Fold in cornflakes and sultanas with a wooden spoon until well mixed.
  • Take 1 tablespoon of mixture and shape into balls. Place them on baking trays with enough space to expand. Use a spatula to gently flatten them. Bake for 12-14 minutes, rotating trays halfway through, or until lightly golden. Let them sit on the tray for 5 minutes before moving them to a wire rack to cool.
