Quick and easy sultana oat biscuits, perfect for kid's after-school snack.
Ingredients:
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 2.20 gm vanilla extract
  • 1 egg, at room temperature
  • 500.00 ml plain flour
  • 4.00 gm baking powder
  • 41.20 gm milk
  • 75.00 gm rolled oats
  • 85.00 gm sultanas
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with parchment paper.
  • With an electric mixer, whip together butter, sugar, and vanilla in a small bowl until light and fluffy. Mix in the egg until fully incorporated. Sprinkle flour and baking powder over the butter mixture. Pour in milk and gently stir until just mixed. Set aside 1 1/2 tablespoons of rolled oats. Combine the rest of the rolled oats, sultanas, and milk into the dough. Stir until thoroughly combined.
  • Take generous scoops of the mixture and roll them into balls. Put them on baking trays lined with parchment paper. Flatten the biscuits to around 4cm in diameter by pressing down with the heel of your hand (leave space for them to spread). Gently brush the tops of the biscuits with cold water and sprinkle with the remaining oats.
  • Bake for 15 to 18 minutes, rotating trays halfway through, until lightly golden. Cool biscuits on trays for 5 minutes, then transfer to wire racks to cool completely. Serve.
