Coronation prawn cocktail

Kick off your party with elegant mild curry prawn cocktails.
Ingredients:
  • 18.20 gm light olive oil
  • 1 small onion, peeled, chopped
  • 5.00 gm mild curry powder
  • 1 lemon, juiced
  • 60.00 gm sweet mango chutney
  • 20.00 ml tomato puree
  • 100ml vegetable liquid stock
  • 200ml whole-egg mayonnaise
  • 150ml Greek Style Yoghurt
  • 1 butter lettuce, outer leaves removed, washed
  • 1 avocado, peeled, thinly sliced
  • 1 mango, peeled, thinly sliced
  • 20 cooked king prawns, peeled, with tails on
  • Cooked pappadums, to serve
Instructions:
  • In a small saucepan, warm the oil, then sauté the onion over low heat until soft but not browned (1-2 minutes). Stir in the curry powder, lemon juice, chutney, tomato puree, and stock. Cook until slightly reduced (about 2 minutes). Cool the mixture, then blend it in a food processor with the mayonnaise and yogurt until smooth. Enjoy!
  • In each of the 4 bowls, layer lettuce leaves with avocado slices, mango slices, and prawns. Drizzle with sauce and serve alongside pappadums.
