Cottage Cheese Potato Bake

Indulge in a delicious cheesy potato casserole, baked to perfection in just 55 minutes!
Ingredients:
  • 4 cups diced peeled potatoes (about 1 3/4 pounds)
  • 2/3 cup low-fat cottage cheese
  • 1/3 cup reduced-fat sour cream
  • 2 teaspoons Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1/8 to 1/4 teaspoon garlic powder
  • Dash of pepper
  • 1/4 cup finely chopped onion
  • 1/2 cup shredded reduced-fat Cheddar cheese (2 ounces)
  • 1/4 cup purchased corn flake crumbs
  • 1 teaspoon margarine or butter, melted
Instructions:
  • Preheat the oven to 350°F. Cook potatoes in a 3-quart saucepan filled with enough water to cover them. Bring to a boil, then simmer covered for 5 to 10 minutes until tender. Drain well and transfer potatoes to an ungreased 8x8x2 inch square baking dish.
  • Into a food processor or blender, add cottage cheese, sour cream, flour, salt, garlic powder, and pepper. Blend until smooth. Gently stir the cottage cheese mixture, onion, and cheese into the potatoes.
  • Combine crunchy corn flake crumbs with creamy margarine in a small bowl, then generously sprinkle the mixture over the potatoes.
  • Bake without a cover for 18 to 20 minutes, or until piping hot. Allow it to rest for 10 minutes before enjoying.
