Make delicious parmesan sweet potato sacks with the kids!
Ingredients:
  • 2 (about 400g each) sweet potatoes (kumara), unpeeled
  • Olive oil spray
  • 2 shallots, trimmed, thinly sliced
  • 40g green round beans, trimmed, coarsely chopped
  • 40.00 ml low-fat cottage cheese
  • 40.00 ml finely grated parmesan
Instructions:
  • 1. Preheat your oven to 180°C and line a baking tray with non-stick baking paper. 2. Cut the sweet potatoes in half crossways and place them cut-side down on the lined tray. 3. Give them a light spray with oil and bake for 1 hour or until the flesh is soft. 4. Set aside for 15 minutes to cool before enjoying.
  • Scoop out two-thirds of the potato flesh from each half to make a shell. Transfer to a bowl and coarsely mash with a spoon. Return the shells to the tray and lightly press down to scrunch them.
  • In a frying pan over gentle heat, sizzle cumin, shallots, and beans until beans are vibrant and tender-crisp, about 2 minutes. Combine with the mash, fold in cottage cheese and half the parmesan, then season generously with salt and pepper.
  • Evenly distribute the mixture into the shells, then sprinkle the remaining Parmesan on top. Bake until golden brown, around 15-20 minutes.
