Country Ham and Cheddar Mini Hand Pies

Delicious country-inspired appetizers from For the Love of the South by chef Amber Wilson.
Ingredients:
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 pinch ground nutmeg
  • 1 pinch Salt and pepper to taste
  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 1 egg, slightly beaten
  • 2 cups grated white Cheddar cheese
  • 12 slices thinly sliced country ham, halved
  • 1 sheet Reynolds Wrap® Aluminum Foil
Instructions:
  • Preheat the oven to 400 degrees F. In a small saucepan over medium-low heat, melt the butter. Whisk in the flour to create a roux, and cook for 1-2 minutes. Gradually whisk in the milk, nutmeg, salt, and pepper until the bechamel thickens enough to coat the back of a spoon. Remove from heat and set aside.
  • Roll out the thawed puff pastry on a lightly floured surface until it's 1/8 inch thick. Cut the puff pastry sheet into 3 long pieces and then cut each piece in half crosswise to make 6 equal pieces. Place the puff pastry pieces on a baking sheet lined with Reynolds Wrap® Aluminum Foil and brush the edges with the egg wash.
  • Sprinkle 1 tablespoon of cheese on half of the puff pastry, lay a slice of country ham on top, spread 1 tablespoon of bechamel over the ham. Repeat with another layer of cheese and ham, finishing with 1 tablespoon of bechamel. Fold the other half of the pastry over, crimp edges with a fork, brush with egg wash, and cut slits on top for steam to escape. Repeat with the remaining pastry.
  • Once the hand pies are baked for 20-25 minutes, or until they have achieved a golden brown color on top, transfer them to a wire rack to cool promptly.
