Delicious couscous pilaf with toasted almonds, coconut, and cranberries. Perfect side dish!
Ingredients:
  • butter-flavored cooking spray
  • 0.33333334326744 cup chopped almonds
  • 0.33333334326744 cup shredded coconut
  • 0.33333334326744 cup dried cranberries
  • 1 cup fat-free, reduced-sodium chicken broth
  • 1 cup uncooked couscous
Instructions:
  • 1. Preheat a skillet over medium heat and lightly grease it with cooking spray. 2. Toast almonds for about 2 minutes, stirring constantly, until lightly browned. 3. Add coconut and continue cooking and stirring until both almonds and coconut are fully toasted, for 3 to 4 minutes. 4. Lastly, add cranberries and cook until heated through, approximately 1 minute.
  • 1. Boil chicken broth in a pot, then remove from heat. Add couscous and cover. Let sit for 4 to 5 minutes until tender. Stir in almonds, coconut, and cranberries until blended.
