Try this flavorful mushroom and bell pepper couscous pilaf with nuts - a quick and versatile dish ready in just 40 minutes!
Ingredients:
  • 3/4 cup uncooked couscous
  • 1 cup chicken broth
  • 1 tablespoon butter or margarine
  • 3 ounces fresh mushrooms, chopped (1/2 cup)
  • 1/4 cup chopped cashews or pecans
  • 1/3 cup chopped green bell pepper
  • 1 medium tomato, chopped (2/3 cup)
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic salt
  • 2 green onions, chopped
Instructions:
  • Preheat your oven to 375°F and generously coat a 9-inch round nonstick baking pan or an 8x8x2-inch square baking dish with cooking spray.
  • Combine the couscous and broth in a pan, cover with aluminum foil, and bake for 10 minutes. Fluff with a fork before serving.
  • Heat butter in a 10-inch nonstick skillet over medium-high heat until melted. Sauté mushrooms, cashews, and bell pepper until the bell pepper is crisp-tender. Remove from heat and stir in the remaining ingredients. Combine the vegetable mixture with couscous in the same pan.
  • Bake the pilaf, uncovered, for an additional 10 minutes, or until the couscous turns a light brown color.
