Satisfying cowboy casserole with creamy filling and crispy tots.
Ingredients:
  • 2 slices thick-cut bacon, chopped
  • 1 cup chopped yellow onion
  • 1 cup chopped red bell pepper
  • 1 pound ground sirloin
  • 8 ounces hot pork country sausage (such as Jimmy Dean)
  • 2 teaspoons chopped garlic
  • 1 (10.75 ounce) can condensed cream of mushroom soup (such as Campbell's®)
  • 0.5 cup whole milk
  • 0.25 cup sour cream
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen corn kernels
  • 1.5 cups shredded extra-sharp Cheddar cheese, divided
  • 1 (32 ounce) package frozen tater tots
  • 2 tablespoons chopped fresh flat-leaf parsley
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and position the rack in the center.
  • Begin by heating a large cast-iron skillet over medium heat. Add bacon and cook, stirring frequently, until it is golden brown and crispy, which should take around 7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, while saving 2 tablespoons of the flavorful drippings.
  • In the same skillet, sauté onion and bell pepper until softened, around 4 minutes. Next, raise the heat and add ground beef and sausage, cooking until browned and crumbly, about 6 to 8 minutes. Stir in garlic and cook until aromatic, about 1 minute. If desired, drain any excess fat. Finally, mix in soup, milk, sour cream, salt, black pepper, corn, bacon, and 1/2 cup of cheese.
  • Top with the remaining 1 cup of cheese, then creatively arrange tots in concentric circles over the cheese layer (you'll have about 1 1/2 cups of tots left for another recipe).
  • Bake in the hot oven until the top is golden brown and the beef mixture is bubbly, for approximately 35 minutes. Allow it to rest for 5 minutes before serving. Garnish with parsley and enjoy while hot.
