Cranberry and brie cheese-tinis

Decadent martini topped with brie, prosciutto skewer, and salt cracker rim.
Ingredients:
  • 100g packet Ritz crackers
  • 1/2 tsp hot chilli powder
  • 0.60 gm sea salt
  • 150g double cream brie
  • 62.50 ml cranberry jelly
  • 12 fresh mint leaves
  • 6 thin slices prosciutto, halved lengthways
  • 250.00 ml ice cubes
  • 750.00 ml chilled cranberry juice
  • 375.00 ml gin
  • 62.50 ml orange-flavoured liqueur
Instructions:
  • Pulse crackers in food processor until finely ground. Transfer to a bowl, then stir in chilli powder and salt until well mixed.
  • Split the brie in half horizontally with a wet knife. Spread 2 teaspoons of cranberry jelly on one cut-side of the brie, then sandwich the brie halves together. Cut into 12 pieces with a wet knife. Gently coat the cheese pieces in the cracker mixture and place on a plate.
  • Skewer 1 piece of cheese, 1 mint leaf, and 1 piece of prosciutto. Repeat with the rest of the cheese, mint, and prosciutto to make a total of 12 skewers. Chill until ready to serve.
  • Use the remaining cranberry jelly to brush the edges of 6 serving glasses. Press them into the remaining cracker mixture to coat.
  • Combine ice cubes, cranberry juice, gin, and liqueur in a large jug, stirring to mix well. Pour the mixture into serving glasses through a strainer. Garnish with skewers before serving.
