Delicious cranberry bars with a perfect balance of tartness and sweetness, spiced with ginger and cinnamon. Perfect dessert alternative to brownies.
Ingredients:
  • 1 (12 ounce) package whole cranberries
  • 1 (18.25 ounce) package yellow cake mix
  • 0.75 cup butter, melted
  • 1 cup rolled oats
  • 0.75 cup packed light brown sugar
  • 1 teaspoon ground ginger
Instructions:
  • Place cranberries, white sugar, and water in a saucepan over medium heat. Cook until all the cranberries have burst and the mixture has thickened, about 15 minutes. Let it cool before using.
  • Preheat your oven to 350°F (175°C).
  • Combine cake mix, melted butter, and eggs in a large bowl. Add oats, brown sugar, ginger, and cinnamon. Set aside 1 1/2 cups of the mixture. Press the remaining mixture into a 9x13-inch baking dish to form a solid base. Spread cranberries on top. Crumble reserved mixture over the cranberries evenly.
  • Bake in the preheated oven until the top turns golden brown, for 35-40 minutes. Let it cool in the pan for about 40 minutes before slicing into 24 bars.
