Impress your guests with these elegant, healthy chicken, cranberry, and walnut appetizers.
Ingredients:
  • 1 package (1.9 oz) frozen mini phyllo shells (15 shells)
  • 1/4 cup chopped dried cranberries
  • 3/4 cup finely chopped cooked chicken breast
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons chopped walnuts, toasted
  • 2 green onions, chopped (2 medium)
  • 1 teaspoon chopped fresh rosemary leaves
Instructions:
  • Thaw phyllo shells according to package instructions.
  • Combine 2 tablespoons of cranberries with the rest of the ingredients in a medium bowl.
  • Spoon hearty amounts of the mixture into the shells. Top with the 2 tablespoons of remaining cranberries and, optionally, rosemary sprigs for garnish.
