Cranberry Pork Chops

Upgrade pork chops: fill with cranberries mixed with orange marmalade for irresistible flavor.
Ingredients:
  • 1/3 cup fresh or frozen (thawed) cranberries, coarsely chopped
  • 2 tablespoons orange marmalade
  • 1/8 teaspoon ground cloves
  • 2 pork loin chops, about 3/4 inch thick
  • 2 tablespoons honey
Instructions:
  • Preheat oven to 325°F and generously grease a 9x9x2-inch square pan.
  • Combine the cranberries, marmalade, and cloves to create a flavorful mixture. Carefully cut a pocket into each pork chop towards the bone and stuff them with the cranberry mixture. Arrange the pork chops in a pan and drizzle 1 tablespoon of honey over each chop.
  • Bake uncovered for around 45 minutes or until the pork is fully cooked in the center.
