Cranberry spiced muffins

Whip up some festive Christmas muffins to spread holiday cheer!
Ingredients:
  • 140g dried cranberry
  • 300g self-raising flour
  • 155g brown sugar
  • 70g pecan
  • 5.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 185ml buttermilk
  • 125ml vegetable oil
  • 1 egg, lightly whisked
  • 20.00 ml finely chopped pecans, extra
  • 16.00 gm brown sugar, extra
Instructions:
  • Preheat your oven to 200°C and line 12 muffin pan cups with paper cases that hold 1/3 cup (80 ml) each.
  • Place the cranberries in a heatproof bowl and pour boiling water over them. Allow them to soak for 10 minutes, then rinse well.
  • In a large bowl, mix together flour, sugar, pecans, ginger, cinnamon, nutmeg, and cranberries. In a separate jug, whisk buttermilk, oil, and egg. Pour buttermilk mixture into the flour mixture and stir until just combined. Spoon the batter evenly into lined pans. Combine extra pecans and sugar in a small bowl, then sprinkle over the muffins.
  • Bake in a preheated oven until a skewer comes out clean, about 20 minutes. Then, cool on a wire rack and enjoy warm.
