Delightfully scented cranberry-walnut biscotti, ready in just an hour, infused with vanilla, almond, and orange flavors.
Ingredients:
  • 3 eggs
  • 0.5 cup canola oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon grated orange zest
  • 3.25 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.75 cup sweetened dried cranberries
  • 0.5 cup chopped walnuts
Instructions:
  • Heat the oven to 375 degrees F (190 degrees C) and prepare 2 cookie sheets with parchment paper.
  • Combine sugar, eggs, oil, extracts, and orange zest in a large bowl and mix until smooth.
  • Mix flour and baking powder with the egg mixture until a firm dough forms. Add cranberries and walnuts. Split the dough into 2 parts and shape each into a log the width of your baking sheet. Use parchment paper to help flatten the logs to about 1/2-inch thick.
  • Bake in the preheated oven until golden brown, about 25-30 minutes. Transfer the cookies to a wire rack to cool for 10-15 minutes before handling.
  • Arrange 1/2-inch slices of rolls cut-side up on the cookie sheet and bake until lightly toasted, 5 to 7 minutes per side.
