Cream Cheese French Toast Bake with Strawberry Topping

Irresistible French toast casserole: layers of bread bake together for a convenient and delicious meal.
Ingredients:
  • 1 container (8 oz) pineapple cream cheese spread
  • 1 loaf (1 lb) French bread (about 18 inches long), cut into 24 (3/4-inch-thick) slices
  • 4 eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter or margarine, melted
  • 3 cups fresh strawberries
  • 2 tablespoons amaretto, if desired
  • 1 cup fresh blueberries
Instructions:
  • Prepare the baking dish by generously spraying it with cooking spray. Spread approximately 1 tablespoon of cream cheese on each of the 12 bread slices. Create 6 sandwiches by placing a bread slice on top of each cream cheese-covered slice. Arrange the sandwiches in the baking dish to form a single layer at the bottom of the dish.
  • In a medium bowl, whisk together eggs, milk, 1/4 cup sugar, salt, and cinnamon until well combined. Pour over sandwiches in a baking dish and allow to sit at room temperature for 5 minutes. Flip the sandwiches over, cover, and refrigerate for at least 8 hours or overnight.
  • Finely dice 1 cup of strawberries. Refrigerate the remaining berries for later use. In a nonmetal bowl, delicately combine the diced strawberries, 1/4 cup of sugar, and amaretto. Cover and refrigerate for at least 8 hours or overnight.
  • Preheat the oven to 400°F. Uncover the baking dish and generously drizzle the sandwiches with melted butter. Bake for 25 to 30 minutes until they are beautifully golden brown.
  • Slice the remaining strawberries and add them along with the blueberries to the chilled strawberry mixture; gently mix them together. Serve the French toast with the delightful berry topping.
