Cream Puffs

Flaky pastry puffs filled with creamy goodness, with endless flavorful options!
Ingredients:
  • 1 cup water
  • 1/2 cup butter or margarine
  • 1 cup Gold Medal™ all-purpose flour
  • 4 eggs
  • 1 package (4-serving size) vanilla instant pudding and pie filling mix
  • 1 cup milk
  • 1 teaspoon rum extract
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 cups whipping cream
  • Powdered sugar
  • 1/4 cup granulated or powdered sugar
  • 1 teaspoon peppermint extract
  • 5 or 6 drops red or green food color
Instructions:
  • Preheat oven to 400°F. In a 2 1/2-quart saucepan, bring water and butter to a rolling boil. Stir in flour, then simmer. Once a dough ball forms, remove from heat and beat in eggs until smooth.
  • Drop slightly less than 1/4 cupfuls of dough onto an ungreased cookie sheet, spacing them 3 inches apart. Bake for 35 to 40 minutes or until puffed and golden. Let cool for about 30 minutes in a draft-free area.
  • For the Eggnog Fluff Filling, in a large bowl, use an electric mixer to blend pudding mix, milk, rum extract, nutmeg, and ginger until smooth. Then, add whipping cream and beat until soft peaks form. Fill the puffs and chill until serving. Sprinkle with powdered sugar or garnish with colored sugar right before serving. For the Peppermint Whipped Cream Filling, use an electric mixer to beat the ingredients in a large bowl until stiff peaks form. Fill the puffs and refrigerate until needed. Serve promptly, or refrigerate for up to 4 hours.
