Bake petite boiling onions in sage-infused sauce for a sweet and creamy side dish.
Ingredients:
  • 24 small onions
  • 10 fresh mushrooms, sliced
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon salt
  • 2 teaspoons dried sage
  • 2 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • 4 tablespoons chopped fresh parsley
  • 2 pinches paprika
Instructions:
  • Peel and trim onions. Simmer gently in salted water until tender, for approximately 30 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously butter a shallow baking dish.
  • Sauté the sliced mushrooms in the butter or margarine until golden. Stir in the flour, then add the half and half or milk, salt, sage, half of the lemon peel, and all of the lemon juice. Cook over medium heat, stirring constantly until the sauce thickens.
  • Transfer the caramelized onions to the baking dish and generously ladle the creamy mushroom sauce on top.
  • After baking at 350 degrees F (175 degrees C) for 20 minutes, garnish with chopped parsley, remaining lemon peel, and paprika to your liking.
