Create decadent eggnog fudge with marshmallows and butterscotch chips using a simple recipe.
Ingredients:
  • cooking spray
  • 1 cup eggnog
  • 3 cups white sugar
  • 1.5 cups miniature marshmallows
  • 0.5 teaspoon ground nutmeg
  • 1 (6 ounce) package butterscotch chips
  • 2 tablespoons cold butter
Instructions:
  • Line a 9-inch square pan with aluminum foil and lightly spray it with cooking spray. Also, spray the inside of a large saucepan with cooking spray.
  • In a saucepan, combine eggnog and sugar over medium-high heat and stir until it boils vigorously, using a wooden spoon. Let it boil for 2 minutes.
  • Gently mix in marshmallows and nutmeg with the eggnog. Bring the mixture to a boil while stirring constantly; let it boil for 6 minutes, then remove from heat. Add butterscotch chips and butter, and vigorously whisk until well combined and smooth. Transfer the mixture to the saucepan.
  • Allow the fudge to rest at room temperature until firm, for a minimum of 15 minutes.
