Try this quick and tasty smoked sausage sauerkraut soup for a creamy and comforting meal.
Ingredients:
  • 1 pound smoked sausage, finely diced
  • 6 tablespoons chopped onion
  • 6 tablespoons all-purpose flour
  • 2 cups half-and-half
  • 1 teaspoon dried thyme
  • 1 (8 ounce) can sauerkraut, undrained
Instructions:
  • In a large saucepan over low heat, sauté smoked sausage and onion until lightly browned, about 15 minutes. Add flour to coat, then gradually pour in milk and half-and-half. Increase heat to medium, simmer until thickened, about 5 minutes. Stir in thyme. Mix sauerkraut and juice into soup, heat through for 1 to 2 minutes.
