Whip up a quick and delicious gnocchi dish for the family in just 30 minutes.
Ingredients:
  • 500g packet potato gnocchi
  • 125.00 ml frozen peas
  • 9.20 gm olive oil
  • 1 medium brown onion, finely chopped
  • 125g rindless shortcut bacon, chopped
  • 150g button mushrooms, sliced
  • 62.50 gm dry white wine
  • 375ml can light and creamy evaporated milk
  • Shaved parmesan cheese, to serve
Instructions:
  • Boil gnocchi in salted water according to package instructions, then add peas for the last 2 minutes until tender. Drain the mixture.
  • In a large, deep non-stick frying pan over medium heat, heat oil. Add onion, garlic, and bacon. Sauté until onion softens, about 3 to 4 minutes. Then add mushrooms and cook until just tender, about 2 to 3 minutes. Stir in flour and cook for 1 minute. Pour in wine, bring to a boil, then reduce heat to medium-low. Add milk and simmer until slightly thickened, about 3 to 4 minutes.
  • Combine gnocchi with the savory bacon mixture, stirring continuously for 1 to 2 minutes until warmed. Portion into bowls, sprinkle with Parmesan, and present your scrumptious dish.
