Dairy-free, egg-free, and soy-free creamy cashew dressing, with a hummus-like twist.
Ingredients:
  • 0.5 cup unsalted raw cashews
  • 0.5 cup water, or more as needed
  • 0.25 onion
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 2 cloves garlic, peeled
  • 0.5 teaspoon dried basil
Instructions:
  • In a food processor or blender, blend cashews, water, onion, olive oil, lime juice, garlic, basil, salt, and pepper until ultra-smooth, about 3 to 5 minutes. For a thinner consistency, add a small amount of extra water.
