Creamy Greek yogurt enhances the flavors of this aromatic chicken curry with spices like coriander, cumin, garlic, and cinnamon.
Ingredients:
  • 1 pound skinless, boneless chicken breast, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2.5 tablespoons curry powder
  • 1 teaspoon coarse salt
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground coriander
  • 0.75 cup fat-free chicken broth
  • 0.5 cup plain fat-free Greek yogurt
Instructions:
  • In a wide, shallow bowl, gently coat the chicken pieces thoroughly with flour.
  • In a large non-stick skillet, warm olive oil over medium heat. Cook onion until soft, about 6 to 7 minutes. Add curry powder, salt, cumin, cinnamon, garlic powder, black pepper, and coriander. Cook until spices are aromatic, around 1 minute.
  • Turn up the heat to medium-high. Add the flour-coated chicken to the onion mixture and cook until browned on the outside, about 3 to 5 minutes, stirring occasionally.
  • Simmer chicken broth in the skillet until thickened and chicken is fully cooked, about 8 minutes. Stir in yogurt until smooth and hot, for an additional 2 to 3 minutes.
