Creamy mashed cauliflower - a delicious low-carb alternative to mashed potatoes.
Ingredients:
  • 1 head cauliflower
  • 6 cloves garlic, peeled
  • 0.25 cup plain yogurt
  • 0.25 cup grated Parmesan cheese
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon garlic salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • In a pot, simmer cauliflower and garlic in water until cauliflower is tender, about 10-15 minutes. Drain excess water.
  • In a food processor, combine cauliflower and garlic until smooth. Add yogurt, Parmesan, parsley, oil, garlic powder, garlic salt, and pepper. Blend until well combined. Season to taste before serving.
