Ingredients:
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 sweet onion, diced
  • 3 cloves garlic, minced
  • 2 cups pumpkin puree
  • 1 cup vegetable broth
  • 0.66666668653488 cup half-and-half
  • 2 tablespoons chopped fresh parsley
  • 0.33333334326744 teaspoon ground nutmeg, or to taste
  • 0.25 teaspoon white pepper
  • 1 pound tri-color rotini pasta
  • 1 tablespoon grated Parmesan cheese, or to taste
Instructions:
  • In a skillet over medium heat, sauté onion and garlic in olive oil and butter until onion is translucent, about 3 to 4 minutes. Stir in pumpkin puree, vegetable broth, half-and-half, parsley, nutmeg, white pepper, salt, and black pepper; cook until heated through, about 10 to 15 minutes.
  • 1. Boil a pot of salted water until it shimmers; cook the rotini until al dente, about 8 minutes; drain and place in a serving bowl. Finish with pumpkin sauce and Parmesan cheese.
