Creamy smoked chicken and spinach pasta

Whip up a quick and easy dinner for a stress-free mealtime!
Ingredients:
  • 400g penne rigate
  • 36.40 gm olive oil
  • 1 medium brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 550g chicken drumstick
  • 375.00 ml tomato passata sauce
  • 126.25 gm thickened cream
  • 100g baby spinach
  • Shaved parmesan cheese, to serve
Instructions:
  • Boil pasta in salted water as per packet instructions until tender. Drain and return to pan.
  • Heat oil in a large non-stick pan over medium heat. Add onion and garlic, cook until softened. Mix in chicken and cook until heated through. Stir in passata sauce and cream. Simmer until slightly thickened.
  • Lower the heat and gently stir in the fresh spinach and cooked pasta. Season the mixture with a touch of salt and pepper. Cook while stirring for 1 to 2 minutes until the spinach is just wilted. Serve the delicious mix in bowls and finish with a sprinkle of grated parmesan on top. Enjoy your meal!
