Delectable French crepes with a touch of elegance.
Ingredients:
  • 100g plain flour
  • Pinch of salt
  • 1 egg
  • 1 egg yolk
  • 300ml milk
  • 20.00 gm unsalted butter, melted plus extra to fry
  • Ice-cream, to serve
  • 100g caster sugar
  • 35g unsalted butter
  • 150ml orange juice
  • 1 orange, zested
  • 60.00 ml Grand Marnier or Cointreau
  • 40.00 ml brandy
Instructions:
  • Combine the first six ingredients in a food processor until smooth. Transfer the batter into a jug and rest for 30 minutes. Heat a frying pan, brush with melted butter, and pour in enough batter to cover the base. Cook until lightly browned, about 2 minutes.
  • Gently turn the crepe to brown evenly. Then, transfer it to a plate and continue with the remaining batter.
  • Start by gently heating the sugar and 1 tablespoon of water in a frying pan until the sugar has dissolved. Next, add the butter and cook over medium heat until it turns a beautiful golden brown, which should take around 4-5 minutes. After that, mix in the orange juice and zest, and let it simmer for a couple of minutes. Finally, pour in the liqueur and brandy, give it a good stir, then dip a crepe into the luscious sauce, fold it into quarters, and elegantly place it on a serving plate.
  • Serve 2-3 crepes per person along with a scoop of ice cream.
