Crisp garlic lemon potatoes

Deliciously crispy lemon-infused roast potatoes perfect for any meal.
Ingredients:
  • 1kg chat (small coliban) potatoes, quartered
  • 18.20 gm extra light olive oil
  • 20.00 ml finely grated lemon rind
  • 1.20 gm salt
  • 1/4 tsp freshly ground black pepper
  • Italian beef rissoles with fresh tomato salsa (see previous recipe), to serve
Instructions:
  • Preheat your oven to 220°C. Boil the potatoes in a large saucepan of salted water for 8 minutes until soft. Drain thoroughly.
  • In a large roasting pan, combine potatoes, oil, lemon rind, garlic, salt and pepper. Roast in the oven until golden brown and crispy, about 20 minutes. Serve alongside the Italian beef rissoles with fresh tomato salsa.
