Indulgent oatmeal cookies with coconut and chocolate.
Ingredients:
  • 0.5 cup shortening
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup rolled oats
  • 0.5 cup flaked coconut
  • 0.5 cup miniature semi-sweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease your cookie sheets.
  • Cream together shortening, white sugar, and brown sugar in a large bowl. Add egg and vanilla, mix until smooth. Combine flour, baking powder, baking soda, and salt; stir into the batter. Mix in oats, coconut, and chocolate chips until evenly distributed. Roll dough into walnut-sized balls and place 2 inches apart on prepared cookie sheets.
  • Place in the preheated oven and bake for 12 minutes, or until the edges are a delicious golden brown.
