Transform your favorite breakfast oats and crispy rice cereal into irresistible oatmeal coconut pecan cookies. Crunchy, thin treats with a soft center and crispy edges, perfect for dunking in milk. Easy to make, just measure carefully and prepare to double the batch - they're that delicious!
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup crisp rice cereal
  • 1/2 cup flaked coconut
  • 1/2 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F and generously coat cookie sheets with cooking spray.
  • In a spacious bowl, use an electric mixer to blend butter, brown sugar, and granulated sugar until fluffy. Incorporate the egg.
  • Combine flour, baking soda, baking powder, and salt, mixing until well blended. Fold in oats, cereal, coconut, and pecans. Drop tablespoonfuls of dough onto cookie sheets, spacing them 2 inches apart.
  • Bake for about 10 minutes until golden brown, then transfer to cooling racks.
