Succulent chicken with vibrant giardiniera.
Ingredients:
  • 4 (4 ounce) boneless, skinless chicken breasts
  • salt and freshly ground black pepper to taste
  • 1.5 cups butter and garlic croutons
  • 0.5 cup all-purpose flour
  • 2 large eggs, beaten
  • 3 tablespoons olive oil
  • 0.5 cup giardiniera
  • 4 slices provolone cheese
  • 2 tablespoons minced fresh parsley
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfectly crisp and evenly cooked dish.
  • Tenderize chicken breasts to a uniform 1/4 to 1/2-inch thickness using a meat mallet. Season generously with salt and pepper on both sides.
  • Crush croutons in a food processor until finely ground. Set up 3 separate shallow dishes for crouton crumbs, flour, and beaten eggs.
  • Coat each pounded chicken breast in flour, then in beaten eggs, and finally press into crouton crumbs for a crispy coating.
  • In a large oven-proof skillet, heat olive oil over medium heat. Cook chicken for 2 minutes on each side until golden. Remove from heat and top each breast with 2 tablespoons giardiniera and 1 slice of cheese.
  • Bake in the oven until chicken is fully cooked and reaches an internal temperature of at least 165 degrees F, about 8 to 10 minutes. Garnish with parsley before serving.
