Elevated tortilla with bold flavors.
Ingredients:
  • 400g (approx 6) Ingham Classic Crumbed Chicken Tenders
  • 375.00 ml firmly packed shredded red cabbage
  • 1 carrot, coarsely grated
  • 82.50 ml coarsely chopped fresh flat-leaf parsley leaves
  • 4 red radishes, halved, thinly sliced
  • 9.20 gm olive oil
  • 31.50 gm lemon juice
  • 81.68 gm whole-egg mayonnaise
  • 2 tsp finely grated lemon rind
  • 20.00 ml drained capers, finely chopped
  • 8 mini tortillas, warmed
  • 1 bunch rocket, trimmed (or about 60g baby rocket leaves)
Instructions:
  • Prepare the chicken as directed on the packet. Slice the cooked chicken and keep it warm by covering it with foil.
  • In a medium bowl, mix together cabbage, carrot, parsley, and radish. Drizzle with oil and 2 teaspoons of lemon juice. Toss delicately to blend.
  • In a small bowl, mix together mayonnaise, lemon rind, capers, and the remaining lemon juice.
  • Spread tortillas with zesty lemon mayonnaise, layer with fresh rocket, crunchy cabbage salad, and savory chicken. Roll or fold to seal the delicious filling inside. Enjoy!
