Indulgent crispy egg yolks topped with tangy pickled onions and scallions.
Ingredients:
  • 4 large fresh eggs
  • 2 tablespoons white vinegar
  • 4 cups vegetable oil
  • 1.5 cups all-purpose flour
  • 2 large eggs, lightly beaten
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1.5 cups panko bread crumbs
  • 2 tablespoons chopped pickled red onions (for garnish)
  • 2 tablespoons chopped green onions (for garnish)
  • 1 tablespoon red pepper flakes for garnish, or to taste
Instructions:
  • Fill a saucepan with cold water and heat over medium heat. Add vinegar and bring to a gentle simmer. Crack one egg into a ramekin or measuring cup for easy transfer before adding it to the simmering water.
  • Create a whirlpool in the water by stirring vigorously. Carefully drop the egg into the center while the whirlpool is spinning. Cook gently until the egg white becomes opaque. Use a slotted spoon to remove the egg from the water and place it on a paper towel-lined plate to drain.
  • Heat the oil in a medium saucepan until it reaches 375 degrees F (190 degrees C).
  • Prepare a dredging station with 3 separate bowls: one with flour, another with beaten eggs mixed with salt and pepper, and the last one with breadcrumbs. Gently coat the cooled egg in flour first, then in the egg mixture, and finally in breadcrumbs, ensuring the egg is evenly coated at each station.
  • Carefully lower the egg into the hot oil using a slotted spoon. Fry until golden brown for 2 to 3 minutes, ensuring not to overcook. Drain on a paper towel-lined plate.
  • Top with vibrant pickled red onions, crisp green onions, and a sprinkle of fiery red pepper flakes. Serve promptly.
